Greet your guests as they arrive with a leis made of beautiful, fresh flowers. Plumeria flowers and orchids are used in traditional leis and make a wonderful choice. I love to give orchids as gifts, so buy a small plant for each guest and use it as decoration for the event. To give it a personal touch, write their name on a small card along with a special note tied around the pot with raffia. A variety of orchids are striking when grouped together.

When we attended a Hawaiian Luau on Kauai, the big event was focused on the Kalua pig, smoked underground for hours. This isn’t practical for most of us, so grill pork, salmon and chicken as a great alternative. Other must-have menu items include rice, poi, sweet potatoes, bananas, pineapple and coconut pudding for dessert. I also like to serve drinks with swizzle sticks speared with fresh fruit. Here’s a delicious recipe for a pineapple Mai Tai:

Pineapple Mai Tai

  • 4 oz orange juice
  • 4 oz pineapple juice
  • 1 oz Rose's lime juice
  • 1 oz dark rum
  • 1 oz light rum
  • 1 oz triple sec
  • 1/2 oz grenadine

No Luau is complete without Hawaiian music and hula dancing. To make it a truly memorable event, hire a live band and a professional hula instructor to teach guests how to wiggle their hips. This (along with the Mai-Tai’s) will get everyone on their feet and dancing into the wee hours of the morning. So light the tiki torches and celebrate the final days of summer Hawaiian-style.
