A Colorful, Healthy Halloween Salad Recipe
Yes, Halloween is generally the time for eating as many bars of candy and packs of Skittles as we...I mean our kids can get their hands on. But for those of you who want to serve something healthy this Halloween, I suggest a favorite salad of mine that mixes red and orange together in a bright, tasty combination that's sure to please.
You'll need: three beets, one blood orange, four carrots (shredded) and a pomegranate. Once the beets are cooked and their skins have been removed, dice them into bite-sized pieces. To the beets, add small sections of your blood orange, the shredded carrots and the seeds from your pomegranate. Toss together to create a colorful blood red and bright orange Halloween treat, and add a little ginger-flavored salad dressing for a perfect light Halloween appetizer.
This salad is a great treat for those of us who have had to grow up and stop stealing our children's Halloween candy while they're at school (ummm...I have a friend who does that...). It's a great combination of sweet and savory, and it couldn't be a better color match for Halloween with all of the orange and red. Bon appétit and Happy Halloween!
