National Caviar Day

Caviar is the processed, salted roe of certain species of fish, most notably sturgeon, that is served as a delicacy and eaten as a garnish or spread, often with hors d'oeuvres. Once served as an appetizer in saloons of the Old West, it later became considered extremely valuable and only suitable to be served to royalty and the upper class. In fact, it used to be enjoyed by first-class passengers on airline flights. The price of caviar is still high today, in part due to the endangered status of the sturgeon fish as well as tighter reins on its importation and exportation. Next time you're in a restaurant, check to see if it's on the menu and give it a try!
