Default Vegetarian menu??

I'm having a cookout for my daughter's graduation and I'm a little concerned because some of the guests are vegans or vegetarians. What are some good vegetarian dishes that would be good for a cookout? How much vegetarian food do I need? There will be 3-4 vegetarians at the party.

Off the top of my head, I would recommend different salads - greens, or rice, or pasta. Grilled portabella mushrooms and other vegetables like squash and peppers would be nice. You might also want to offer bread options aside from the usual burger/hot dog buns, too. The good thing about these options, is that everyone, not just the vegetarians, can enjoy them!

Little late but for the future, vegetable & cheese on wooden sticks are always a good choice. Salads are also an obvious choice.
